How to Make Paprika Buttered Cauliflower

  1. Cut off the tough stem ends of each cauliflower and remove most of the outer leaves.
  2. Leave the cauliflowers intact.
  3. Fill a large pot with about 1 1/2 inches of boiling salted water. Carefully place the cauliflowers in the pot, flower side down.
  4. Cover the pot and steam for 15 minutes, or until the cauliflowers are tender-crisp.
  5. Meanwhile, melt 4 tablespoons of butter in a medium skillet over medium heat. Add 1 medium onion, thinly sliced, and saute until softened, about 5-7 minutes.
  6. Stir in 1 tablespoon of paprika and cook for 1 minute more, until fragrant.
  7. Drain the steamed cauliflowers.
  8. Arrange the cauliflowers on a serving platter.
  9. Top generously with the paprika butter-onion mixture.
  10. Serve immediately. Delicious served with marinated flank steak, baked or shoestring potatoes, and rainbow sherbet for dessert!
