How to Make Peanut Brittle In A Jiffy

  1. In a large (at least 8-cup) microwave-safe bowl, combine 1 cup granulated sugar and ½ cup light corn syrup. Mix thoroughly.
  2. Microwave on high for 3 ½ minutes, stirring well after the first 2 minutes. The mixture should begin to bubble.
  3. Add 1 cup salted peanuts to the sugar and syrup mixture. Microwave on high for 4 minutes, stirring after 2 minutes and again at the 4-minute mark. The mixture will thicken considerably.
  4. Remove from microwave and stir in 1 teaspoon vanilla extract and 2 tablespoons (1/4 stick) of unsalted butter. Return to the microwave for 1 minute on high.
