How to Make Peanut Brittle In A Jiffy
- In a large (at least 8-cup) microwave-safe bowl, combine 1 cup granulated sugar and ½ cup light corn syrup. Mix thoroughly.
- Microwave on high for 3 ½ minutes, stirring well after the first 2 minutes. The mixture should begin to bubble.
- Add 1 cup salted peanuts to the sugar and syrup mixture. Microwave on high for 4 minutes, stirring after 2 minutes and again at the 4-minute mark. The mixture will thicken considerably.
- Remove from microwave and stir in 1 teaspoon vanilla extract and 2 tablespoons (1/4 stick) of unsalted butter. Return to the microwave for 1 minute on high.
- Carefully remove from microwave (it will be hot!). Immediately stir in 1 teaspoon baking soda. The mixture will foam up – be careful!
- Quickly pour the mixture onto a lightly greased baking sheet or silicone baking mat. Work quickly as it hardens fast!
- Let cool completely in the refrigerator for at least 15 minutes. Once cooled, break the brittle into pieces and store in an airtight container. Enjoy!
