How to Make Basic Divinity
- In a heavy-bottomed saucepan, combine sugar, corn syrup, and water.
- Cook over medium heat, stirring constantly, until the sugar dissolves.
- Continue cooking, without stirring, until the mixture reaches 240°F (115°C) on a candy thermometer (firm-ball stage).
- Meanwhile, in a clean, grease-free bowl, beat egg whites with an electric mixer until stiff, glossy peaks form.
- Slowly drizzle the hot sugar syrup into the beaten egg whites, beating constantly on low speed at first, then gradually increasing to high speed.
- Beat until the mixture is thick, glossy, and holds its shape.
- Stir in vanilla extract and nuts (if using).
- Drop by rounded tablespoons onto a parchment-lined baking sheet.
- Let the divinity cool and set completely at room temperature (this may take several hours).
- Once set, break into pieces and store in an airtight container at room temperature.
