How to Make Pear And Cashew Slice

  1. Preheat your oven to 180°C (350°F). Grease and flour a 20cm square baking tin.
  2. In a large bowl, combine 2 medium ripe pears (peeled, cored, and diced), 1 cup raw cashews (roughly chopped), 1 cup plain flour, and ¾ cup packed brown sugar. Mix well.
  3. In a small saucepan, melt 125g margarine and ¼ cup golden syrup over low heat, stirring constantly until smooth. Remove from heat.
  4. Lightly beat 1 large egg and stir it into the melted margarine and golden syrup mixture. Gently fold this wet mixture into the pear and cashew mixture until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared baking tin and spread evenly.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  7. Let the slice cool completely in the tin before slicing and serving. Enjoy!
