How to Make Pecan And Choc Bit Brownies

  1. Preheat your oven to 180°C (350°F).
  2. Grease and flour an 18cm x 28cm baking pan. Alternatively, line the base with baking paper, leaving an overhang on the sides to lift the brownies out later.
  3. In a medium saucepan, combine 200g of dark chocolate (chopped) and 170g of unsalted butter. Melt over low heat, stirring frequently until smooth.
  4. Remove from heat and set aside to cool slightly.
  5. In a large bowl, whisk together 4 large eggs, 250g granulated sugar, and 1 teaspoon vanilla extract until pale and fluffy.
  6. In a separate bowl, whisk together 150g all-purpose flour and 1 ½ teaspoons baking powder.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  8. Fold in 150g semi-sweet chocolate chunks, 100g pecan halves (roughly chopped), and the cooled chocolate mixture.
  9. Pour the batter into the prepared pan and spread evenly.
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. Do not overbake!
  11. Let the brownies cool completely in the pan before cutting into squares. This allows them to firm up.
  12. Store in an airtight container at room temperature for up to 3 days (if they last that long!).
