How to Make Plantain Bean Cheese Torte

  1. Preheat oven to 375°F (190°C).
  2. Peel and cut the plantains lengthwise in half. Mash them coarsely with a fork.
  3. In a large bowl, combine the mashed plantains, eggs, flour, baking powder, and salt.
  4. Mix well until a slightly sticky dough forms.
  5. Grease an 8x8 inch baking dish.
  6. Place half of the plantain dough in the bottom of the prepared baking dish, pressing it evenly to form a layer.
  7. Spread half of the rinsed and drained pinto beans over the plantain layer.
  8. Sprinkle half of the shredded cheese over the bean layer.
  9. Repeat layers with remaining beans, cheese, and the rest of the plantain dough.
  10. Bake for 30-40 minutes, or until the torte is golden brown and firm to the touch. A toothpick inserted in the center should come out clean.
  11. Let the torte cool slightly before carefully unmolding and slicing. Serve warm and enjoy!
