How to Make Portabella Mushrooms

  1. Remove the thick end of the mushroom stem, leaving about 1/2 inch attached to the cap.
  2. Place the mushrooms, smooth side up, in a large, shallow glass dish.
  3. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  4. Pour the marinade over the mushrooms, turning to coat evenly. Let stand for 15 minutes.
  5. Preheat grill to medium-high heat. Lightly grease the grill grates.
  6. Place mushrooms, smooth side down, on the preheated grill.
  7. Close the grill lid and cook for 5 minutes.
  8. Turn the mushrooms, baste with the reserved marinade, and cook for another 3-5 minutes, or until the mushrooms are tender and yield to the touch when pressed.
  9. Remove from grill and top each mushroom cap with 1 tablespoon grated Parmesan cheese.
  10. Return to the grill (covered) for 2 minutes, or until the cheese is melted and bubbly.
