How to Make Potato Candy
- Preheat your oven to 400°F (200°C). Wash and pierce a medium russet potato several times with a fork. Bake for approximately 45-60 minutes, or until easily pierced with a fork.
- Remove potato from oven, let cool slightly, then peel and mash thoroughly with a fork until you have about 1/2 cup of smooth mashed potato.
- Add 1/4 teaspoon of pure vanilla extract to the mashed potato and mix well.
- Gradually add powdered sugar, one tablespoon at a time, mixing until a stiff, workable dough forms. You may need more or less than 1 1/2 -2 cups, depending on the moisture content of your potato.
- Lightly dust a clean surface with powdered sugar. Turn the dough out onto the surface and gently knead for a minute or two until it is smooth and no longer sticky.
- Roll out the dough to approximately 1/8 inch thickness. Spread the peanut butter evenly over the surface of the dough.
- Starting from one of the long edges, tightly roll the dough into a log.
- Wrap the log in parchment paper and chill in the refrigerator for at least 30 minutes to firm up.
- Once chilled, unwrap the log and slice it into 1/4-inch thick rounds.
- Dust the potato candy slices with extra powdered sugar before serving. Enjoy!
