How to Make Roasted Chestnuts
- Preheat oven to 200°C (400°F).
- Score an 'X' on the flat side of each chestnut using a sharp knife. Be careful not to cut too deeply into the flesh.
- Place chestnuts in a single layer on a baking sheet.
- Roast for 20 minutes, then remove from oven and let cool slightly until you can handle them.
- Peel the chestnuts while still warm. Set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the peeled chestnuts and stir-fry for 3-5 minutes, or until lightly golden brown.
- Remove chestnuts from skillet and set aside. Use paper towels to remove any excess oil.
- Add 1/4 cup apple cider (or liqueur) to the skillet. Increase heat to high and reduce until the liquid is approximately halved, about 2-3 minutes.
- Return the chestnuts to the skillet. Toss to coat with the reduced apple cider glaze.
- Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Serve immediately while hot.
