How to Make Sugar Free Jalapeno Jelly With Truvia

  1. Wash and chop jalapeños and bell peppers (if using).
  2. Combine jalapeños, bell peppers (if using), water, and lemon juice in a large saucepan. Bring to a boil over medium-high heat.
  3. Reduce heat to medium-low and simmer for 30 minutes, or until the peppers are very soft.
  4. Remove from heat and carefully use an immersion blender to puree the mixture until smooth.
  5. Return the puree to the saucepan. Stir in the Truvia and liquid pectin.
  6. Bring the mixture to a rolling boil (a boil that cannot be stirred down), stirring constantly for 1 minute.
  7. Remove from heat and skim off any foam.
  8. Ladle the hot jelly into sterilized jars, leaving 1/4 inch headspace.
  9. Wipe jar rims clean, place lids and rings on jars, and process in a boiling water bath for 10 minutes (adjust processing time based on your altitude).
  10. Remove jars from the canner and let cool completely. You should hear a “pop” sound as the jars seal.
  11. Once completely cool, check the seals to ensure they are properly sealed. Store sealed jars in a cool, dark place.
