How to Make Taco Cornbread

  1. Preheat oven to 375°F (190°C).
  2. Prepare Jiffy cornbread mix according to package directions. Pour batter into a 10-inch cast iron skillet or oven-safe skillet.
  3. In a large skillet, brown 1 lb ground beef over medium-high heat. Drain excess grease.
  4. Stir in 1 packet taco seasoning and ½ cup water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  5. Once the cornbread is halfway cooked (approximately 15 minutes), carefully pour the taco meat evenly over the top.
  6. Sprinkle 1 cup shredded cheddar cheese over the taco meat.
  7. Bake for another 15-20 minutes, or until the cornbread is golden brown and the cheese is melted and bubbly.
  8. Remove from oven and let cool slightly before adding your favorite taco toppings such as sour cream, salsa, lettuce, tomatoes, and onions.
