How to Make The Queen Of Hearts Valentine's Jam Tarts

  1. Preheat oven to 200°C (400°F/Gas Mark 6).
  2. **Make the pastry:** In a large bowl, sift 225g all-purpose flour. Add 110g cold unsalted butter, cut into cubes, and rub into the flour using your fingertips until the mixture resembles breadcrumbs.
  3. Gradually add 5-7 tablespoons of ice water, mixing with a knife until the dough comes together. Form into a ball, wrap in cling film, and chill for at least 30 minutes.
  4. On a lightly floured surface, roll out the pastry to about 3mm thickness.
  5. Using a 7cm round cookie cutter, cut out 12-18 circles. Re-roll scraps to make more circles if needed.
  6. Using a smaller heart-shaped cookie cutter, cut out the same number of hearts from the remaining pastry.
  7. Butter or grease a mini muffin tin and gently press the pastry circles into each cup.
  8. Prick the base of each tart case with a fork.
  9. Bake for 6 minutes until very pale golden.
  10. Remove from oven and carefully fill each tart with 1 heaped teaspoon of your choice of jam.
  11. Top each jam-filled tart with a pastry heart.
  12. Return to the oven and bake for another 6 minutes until the pastry hearts are golden brown.
  13. Remove and let cool for a few minutes in the tin before gently lifting out with a palette knife.
  14. Transfer to a wire rack to cool completely.
  15. Once cool, arrange the tarts on a serving plate and dust with caster sugar (optional).
