How to Make The Queen Of Hearts Valentine's Jam Tarts
- Preheat oven to 200°C (400°F/Gas Mark 6).
- **Make the pastry:** In a large bowl, sift 225g all-purpose flour. Add 110g cold unsalted butter, cut into cubes, and rub into the flour using your fingertips until the mixture resembles breadcrumbs.
- Gradually add 5-7 tablespoons of ice water, mixing with a knife until the dough comes together. Form into a ball, wrap in cling film, and chill for at least 30 minutes.
- On a lightly floured surface, roll out the pastry to about 3mm thickness.
- Using a 7cm round cookie cutter, cut out 12-18 circles. Re-roll scraps to make more circles if needed.
- Using a smaller heart-shaped cookie cutter, cut out the same number of hearts from the remaining pastry.
- Butter or grease a mini muffin tin and gently press the pastry circles into each cup.
- Prick the base of each tart case with a fork.
- Bake for 6 minutes until very pale golden.
- Remove from oven and carefully fill each tart with 1 heaped teaspoon of your choice of jam.
- Top each jam-filled tart with a pastry heart.
- Return to the oven and bake for another 6 minutes until the pastry hearts are golden brown.
- Remove and let cool for a few minutes in the tin before gently lifting out with a palette knife.
- Transfer to a wire rack to cool completely.
- Once cool, arrange the tarts on a serving plate and dust with caster sugar (optional).
