How to Make Turtle Cheesecake

  1. Preheat oven to 300°F (150°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine 1 ½ cups graham cracker crumbs and 6 tablespoons melted butter. Press firmly into the bottom and 1 inch up the sides of the prepared pan.
  3. In a large bowl, beat 16 ounces cream cheese and 14 ounces sweetened condensed milk until smooth.
  4. Add ½ cup granulated sugar, 4 large eggs, 2 tablespoons lime juice, and 1 teaspoon vanilla extract. Beat until combined.
  5. In a microwave-safe bowl, melt 12 ounces semi-sweet chocolate morsels in 30-second intervals, stirring until smooth.
  6. Gently fold 2 cups of the cheesecake batter into the melted chocolate morsels.
  7. Spoon alternating layers of the plain cheesecake batter and the chocolate cheesecake batter into the prepared crust, beginning and ending with the plain batter.
  8. Bake for 1 hour 10-15 minutes, or until the edges are set and the center is just slightly jiggly.
  9. Let cool in the pan on a wire rack for 10 minutes.
