How to Make Weight Watchers Citrus Loaf Fat Free Core

  1. Preheat oven to 180°C (Gas Mark 4). Grease and flour a 9x5 inch loaf tin.
  2. Blend 1 can (400g) chickpeas in a food processor until completely smooth.
  3. Add 2 large eggs, 1/4 cup Splenda (or equivalent sweetener), 2 teaspoons baking powder, zest of 1 orange, and zest of 1 lemon to the food processor.
  4. Blend until well combined.
  5. Pour the batter into the prepared loaf tin and bake for 30-35 minutes, or until a skewer inserted into the center comes out clean.
  6. Remove from oven and let cool slightly in the tin. Use a toothpick or skewer to poke several holes across the top.
