How to Make Baked Potatoes With A Spicy Filling

  1. Preheat your oven to 400°F (200°C).
  2. Scrub 4 large russet potatoes thoroughly and pat them completely dry.
  3. Prick each potato all over with a fork. (Optional: Lightly brush with 1 teaspoon olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper).
  4. Place the potatoes on a baking sheet and bake for 75-90 minutes, or until a fork easily pierces the center.
  5. Remove from oven and let cool for 10 minutes.
  6. Meanwhile, in a medium bowl, mash 1 (15-ounce) can of garbanzo beans with a fork or potato masher until mostly smooth.
  7. Stir in 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon cayenne pepper (or to taste), and 1/4 cup chopped fresh cilantro.
  8. Cover and set aside.
  9. Once cooled, carefully halve the baked potatoes lengthwise. Using a spoon, gently scoop out the potato flesh, leaving about 1/4-inch of potato in the skins. Place the scooped potato flesh in a bowl.
  10. Mash the potato flesh until smooth. Gently fold in the garbanzo bean mixture and 1/2 cup plain Greek yogurt.
  11. Season generously with salt and pepper to taste.
  12. Fill each potato skin with the potato and garbanzo bean mixture. Place the stuffed potatoes back on the baking sheet.
  13. Return to the oven and bake for 10-15 minutes, or until heated through and slightly browned.
  14. Garnish with the remaining 1/4 cup chopped cilantro and serve immediately.
