How to Make Baked Potatoes With A Spicy Filling
- Preheat your oven to 400°F (200°C).
- Scrub 4 large russet potatoes thoroughly and pat them completely dry.
- Prick each potato all over with a fork. (Optional: Lightly brush with 1 teaspoon olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper).
- Place the potatoes on a baking sheet and bake for 75-90 minutes, or until a fork easily pierces the center.
- Remove from oven and let cool for 10 minutes.
- Meanwhile, in a medium bowl, mash 1 (15-ounce) can of garbanzo beans with a fork or potato masher until mostly smooth.
- Stir in 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon cayenne pepper (or to taste), and 1/4 cup chopped fresh cilantro.
- Cover and set aside.
- Once cooled, carefully halve the baked potatoes lengthwise. Using a spoon, gently scoop out the potato flesh, leaving about 1/4-inch of potato in the skins. Place the scooped potato flesh in a bowl.
- Mash the potato flesh until smooth. Gently fold in the garbanzo bean mixture and 1/2 cup plain Greek yogurt.
- Season generously with salt and pepper to taste.
- Fill each potato skin with the potato and garbanzo bean mixture. Place the stuffed potatoes back on the baking sheet.
- Return to the oven and bake for 10-15 minutes, or until heated through and slightly browned.
- Garnish with the remaining 1/4 cup chopped cilantro and serve immediately.
