How to Make Baked Potatoes With A Spicy Filling

  1. Preheat your oven to 400°F (200°C).
  2. Scrub 4 large russet potatoes thoroughly and pat them completely dry.
  3. Prick each potato all over with a fork. (Optional: Lightly brush with 1 teaspoon olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper).
  4. Place the potatoes on a baking sheet and bake for 75-90 minutes, or until a fork easily pierces the center.
  5. Remove from oven and let cool for 10 minutes.
  6. Meanwhile, in a medium bowl, mash 1 (15-ounce) can of garbanzo beans with a fork or potato masher until mostly smooth.
