- Preheat oven to 180°C (350°F).
- In a saucepan over low heat, melt 100g (1/2 cup) butter, 150g (1 cup) granulated sugar, and 50g (1/4 cup) honey, stirring frequently until smooth and combined.
- In a large bowl, gently combine 500g (10 cups) cornflakes.
- Pour the warm honey mixture over the cornflakes and gently mix until all flakes are evenly coated.
- Spoon the mixture into greased mini muffin tins or patty pans, filling each about ¾ full.
- Bake for 10-12 minutes, or until golden brown and slightly crispy.
- Remove from oven and let cool completely in the muffin tins before transferring to a wire rack to cool completely.
- Once completely cool, store in an airtight container at room temperature for up to a week. Optional: Sprinkle with 100s & 1000s or silver/gold sprinkles before baking for extra fun!
