- In a medium bowl, combine 1/4 cup brown sugar, 2 tablespoons paprika, 1 tablespoon ground coffee, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 tablespoon dried thyme, 1 tablespoon dried oregano, 1 teaspoon black pepper, 1 teaspoon cayenne pepper (optional), and 1 teaspoon salt.
- For an even deeper flavor, lightly toast the whole peppercorns, cumin, and coriander seeds in a dry skillet over medium heat for 2-3 minutes until fragrant. Let cool completely before grinding them to a powder using a spice grinder or mortar and pestle. Add to the bowl with the other ingredients. Mix thoroughly.
- Transfer the Java Rub to airtight jars. Store away from heat and light. It will keep for up to 6 months.
- Use 2-3 teaspoons of the rub per pound of beef. Pat the rub generously onto your steaks at least 30 minutes before cooking (or even better, overnight for maximum flavor).
