- Grease and line a 20 x 30 cm deep baking tin (or two smaller tins) with non-stick baking paper, ensuring the paper extends over the edges for easy lifting.
- In a large, heavy-based saucepan, combine 340g (1 1/2 cups) granulated sugar, 170g (6 oz) unsalted butter, and 1/2 cup (40g) evaporated milk. Stir over medium heat until the butter melts completely and the sugar dissolves fully. (Stir frequently to prevent sticking)
- Bring the mixture to a boil and continue to boil gently, stirring frequently, for about 6-8 minutes, until it reaches the soft-ball stage (116°C/240°F on a sugar thermometer) and turns a rich, dark caramel brown. A silicon spatula is highly recommended!
- Remove from heat and let the mixture stand for 5 minutes, or until the bubbling subsides.
- Add 340g (12 oz) good quality milk chocolate, chopped, and 1 teaspoon vanilla extract. Stir until the chocolate is completely melted and the mixture is smooth and glossy.
- Pour the fudge into the prepared tin and smooth the top surface using a spatula.
- Let cool to room temperature completely.
- Refrigerate for at least 4 hours, or until the fudge is firm.
- Lift the fudge from the tin using the overhanging baking paper. Cut into squares and serve.
- Store in an airtight container in the refrigerator for up to 6 weeks (if it lasts that long!).
