Zubereitung von Lemon Slice
- Preheat oven to 180°C (350°F).
- For the base: Cream together 125g softened butter and 100g caster sugar until light and fluffy.
- Add 200g plain flour and 2 tsp baking powder. Grate in the zest of 1 large lemon. Mix until just combined.
- Press the mixture into the bottom of a lined 20cm x 30cm baking tin.
- Bake for 15-20 minutes, or until the base is lightly golden brown.
- While the base is baking, prepare the lemon curd filling: Whisk together 4 large eggs, 150g caster sugar, and the zest of 1 large lemon.
- Gradually whisk in 150ml fresh lemon juice and 100ml double cream. Mix until smooth.
- Reduce oven temperature to 160°C (325°F).
- Pour the lemon curd filling over the baked base.
- Bake for a further 20-25 minutes, or until the filling is just set and no longer wobbles.
- Let the lemon slice cool completely in the tin before dusting with icing sugar and cutting into squares or fingers.
