- Preheat oven to 350°F (175°C).
- In a large bowl, toss 6 cups (1440g) cubed day-old bread with 1/2 cup (113g) melted butter.
- Lightly grease a 12 x 8 x 2 inch baking dish.
- Place half of the bread mixture in the prepared baking dish.
- Sprinkle half of 2 cups (200g) shredded cheddar cheese over the bread.
- Repeat layers with remaining bread and cheese.
- In a separate bowl, whisk together 6 large eggs, 1 cup (240ml) milk, 1/2 cup (120ml) heavy cream, 1 teaspoon cayenne pepper, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 tablespoon Louisiana hot sauce (or to taste).
- Pour the egg mixture evenly over the cheese layers.
- Cover the baking dish with plastic wrap and refrigerate for at least 3 hours, or preferably overnight.
