- Pour the custard mixture into a greased 8x8 inch (or similar size) ovenproof baking dish. Sprinkle generously with ½ cup (60g) desiccated coconut.
- Place the baking dish into a larger roasting pan. Carefully pour enough hot water into the roasting pan to come halfway up the sides of the baking dish (this creates a bain-marie for even baking).
