Zubereitung von Polenta With Italian Sausage And Vegetables
- Preheat oven to 350°F (175°C).
- Remove Italian sausage from casings and crumble into a large skillet over medium heat. Cook, breaking it up with a spoon, until no longer pink (about 8-10 minutes).
- Remove sausage from skillet; set aside. Reserve 1 tablespoon of sausage drippings in the skillet.
- Add 1 medium onion, chopped, and 2 cloves garlic, minced, to the skillet with the reserved drippings. Sauté until softened, about 5 minutes.
- Add 8 ounces cremini mushrooms, sliced, and 1 medium zucchini, diced. Cook, stirring frequently, until the vegetables have released their liquid and it evaporates (about 5-7 minutes).
- Stir in 1 (14.5 ounce) can diced tomatoes, undrained, 1 teaspoon dried oregano, 1/2 teaspoon dried basil, and 1/4 teaspoon red pepper flakes (or to taste).
- Return the cooked sausage to the skillet. Simmer for 5 minutes to combine flavors.
- Lightly grease an 11x7 inch baking pan.
- Spread a thin layer of the sausage and vegetable sauce on the bottom of the baking pan.
- Arrange a single layer of pre-cooked polenta slices (about 6-8 slices, approximately 1/2 inch thick) on top of the sauce.
- Layer 2 cups of the sausage sauce and 3/4 cup shredded provolone cheese over the polenta.
- Top with another layer of polenta slices, the remaining sausage sauce, and the remaining provolone cheese.
- Sprinkle 1/4 cup grated Parmesan cheese over the top.
- Bake uncovered at 350°F (175°C) for 30-35 minutes, or until bubbly and the cheese is melted and golden brown.
- Let cool for 5-10 minutes before serving.
