- Preheat oven to 190°C (375°F).
- Heat baking trays in the preheated oven for 5 minutes.
- In a clean, grease-free bowl, beat 4 large egg whites until stiff peaks form.
- Gradually add 150g caster sugar, beating constantly until glossy and stiff.
- Gently fold in 4 large egg yolks, one at a time.
- In a separate bowl, sift together 150g plain flour, 50g cornstarch, and 1 tsp baking powder twice. Gently fold the dry ingredients into the egg mixture.
- Carefully fold in 60ml boiling water until just combined. Do not overmix.
- Place heaped teaspoonfuls of the mixture onto the hot, greased baking trays, leaving space between each puff.
- Bake for 5-7 minutes, or until the edges are lightly golden.
- Remove from oven and let cool completely on a wire rack before storing in an airtight container.
- At least six hours before serving, sandwich pairs of cooled puffs together with whipped cream and dust the tops with icing sugar.
