  1. Place 1 tbsp olive oil, 1 large onion (chopped), 2 carrots (chopped), and 2 celery stalks (chopped) in a 5-quart slow cooker.
  2. In a large resealable bag, combine 1 packet (1 oz) brown gravy mix, 1 packet (1 oz) onion soup mix, 1 tbsp steak seasoning, and 1 tsp ground cinnamon.
  3. Add 2 lbs beef stew meat, a few pieces at a time, to the bag and shake to coat evenly.
  4. Add the coated beef to the slow cooker.
  5. In a medium bowl, whisk together 1 cup beef broth, 1 cup apple cider, and 1/2 cup tomato sauce.
  6. Pour the broth mixture over the beef in the slow cooker.
  7. Add 1 bay leaf.
  8. Cover and cook on low for 6-7 hours, or until the beef is fork-tender.
  9. In a small bowl, whisk together 2 tbsp cornstarch and 2 tbsp cold water until smooth.
  10. Stir the cornstarch slurry into the stew.
  11. Cover and cook on high for 15 minutes, or until the stew has thickened to your desired consistency.
  12. Remove and discard the bay leaf before serving. Garnish with fresh parsley (optional).
