How to Make Apple Cider Beef Stew
- Place 1 tbsp olive oil, 1 large onion (chopped), 2 carrots (chopped), and 2 celery stalks (chopped) in a 5-quart slow cooker.
- In a large resealable bag, combine 1 packet (1 oz) brown gravy mix, 1 packet (1 oz) onion soup mix, 1 tbsp steak seasoning, and 1 tsp ground cinnamon.
- Add 2 lbs beef stew meat, a few pieces at a time, to the bag and shake to coat evenly.
- Add the coated beef to the slow cooker.
- In a medium bowl, whisk together 1 cup beef broth, 1 cup apple cider, and 1/2 cup tomato sauce.
- Pour the broth mixture over the beef in the slow cooker.
- Add 1 bay leaf.
- Cover and cook on low for 6-7 hours, or until the beef is fork-tender.
- In a small bowl, whisk together 2 tbsp cornstarch and 2 tbsp cold water until smooth.
- Stir the cornstarch slurry into the stew.
- Cover and cook on high for 15 minutes, or until the stew has thickened to your desired consistency.
- Remove and discard the bay leaf before serving. Garnish with fresh parsley (optional).
