Cómo preparar Cheesecake Cupcakes

  2. Line a 12-cup muffin tin with foil cupcake liners.
  3. Place 1 scant tablespoon of graham cracker crumbs into the bottom of each liner.

  5. Add 2 large eggs one at a time, beating well after each addition.
  6. Beat in 1/4 cup (60ml) sour cream, 1 tablespoon of your favorite liqueur (optional), 1 teaspoon lemon zest, and 1 teaspoon vanilla extract.
  7. Reduce mixer speed to low and gradually beat in 1/4 cup (30g) all-purpose flour and a pinch of salt until just combined.
  8. Spoon about 1/4 cup of batter into each prepared cupcake liner.
  9. Bake for 35 minutes at 325°F (160°C).
  10. While the cupcakes are baking, prepare the topping: In a small bowl, stir together 1/4 cup (60ml) sour cream and 2 tablespoons of strawberry jam.
  11. Once the cupcakes have baked for 35 minutes, spread about 2 tablespoons of the sour cream mixture over each cupcake.
  12. Bake for an additional 5 minutes.
  13. Remove from oven and let cool in the pan on a wire rack for 30 minutes.
  14. Remove cupcakes from the pan and let cool completely on a wire rack.
