Cómo preparar Friar's Omelet
- Fill a Dutch oven with water and bring to a boil. Place a steamer basket inside, ensuring it's not touching the water.
- Add 4 cups peeled and cored apples to the steamer basket.
- Cover and steam for 15-20 minutes, or until apples are very soft.
- Remove apples to a large mixing bowl.
- Mash thoroughly using a potato masher or large spoon.
- Allow to cool for 15 minutes.
- Meanwhile, in a small bowl, combine 1 cup bread crumbs and 1/4 cup melted butter. Set aside.
- Stir in 1/2 cup granulated sugar, 1 tablespoon lemon zest, 2 tablespoons lemon juice, and 4 large egg yolks into the mashed apples.
- In a medium bowl, beat 4 large egg whites with an electric mixer on medium speed until stiff peaks form.
- Gently fold the egg whites into the apple mixture.
- Sprinkle 1/3 cup of the bread crumb mixture evenly over the bottom of an ungreased 2-quart square baking dish or a 1 1/2-quart soufflé dish.
- Spoon the apple mixture evenly over the crumbs.
- Sprinkle the remaining bread crumb mixture over the top.
- Bake in a preheated 350°F (175°C) oven for 30-35 minutes (square dish) or 40-45 minutes (soufflé dish), or until puffed, golden brown, and a knife inserted near the center comes out clean.
- Let cool slightly before serving warm in dessert dishes.
