  1. Preheat oven to 375°F (190°C).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.

  6. Stir in 8 ounces of sliced mushrooms, ½ cup of oil-packed sun-dried tomatoes (drained), ½ cup of Kalamata olives (pitted and halved), and 1 cup of artichoke hearts (drained and quartered).
  7. Pour the rice mixture into an 8x8 inch baking dish.
  8. In a separate saucepan, bring 2 cups of water, 1 ½ cups of vegetable bouillon, ½ teaspoon of dried oregano, ¼ teaspoon of dried thyme, and 1 red bell pepper (seeded and finely chopped) to a boil.
  9. Immediately pour the boiling liquid over the rice mixture in the baking dish.
  10. Cover the baking dish tightly with 2 layers of aluminum foil.
  11. Bake for 75 minutes.
  12. Remove from oven and uncover. Fluff the rice gently with a fork.
  13. Stir in ½ cup of grated Asiago cheese, 2 cups of baby spinach, ¼ cup of chopped fresh parsley, ¼ cup of chopped fresh basil, 2 tablespoons of fresh lime juice, and 1 tablespoon of lime zest.
