  1. Line a 9x9 inch square baking pan with foil, leaving an overhang on the sides for easy removal. Lightly grease the foil with non-stick cooking spray.
  2. In a large saucepan, combine 10 ounces marshmallow creme, 1 (12-ounce) can evaporated milk, and 1/2 cup (1 stick) unsalted butter.

  4. Bring the mixture to a rapid boil and boil for exactly 5 minutes, continuing to stir constantly.
  5. Remove from heat and stir in 1 teaspoon pure vanilla extract.
  6. Add 2 cups semi-sweet chocolate chips (or your preferred chocolate), stirring until completely melted and smooth.
  7. Stir in 1/2 cup chopped pecans (optional).
  8. Pour the fudge mixture into the prepared pan and spread evenly.
  9. Refrigerate for at least 2 hours, or until the fudge is firm.
  10. Once firm, lift the fudge out of the pan using the foil overhang. Peel away the foil.
