  8. Pour the blended vegetable mixture over the tomato paste in the skillet and stir well to combine.
  9. Simmer, partially covered, for 2 1/2 hours, stirring occasionally.
  10. Add 1 cup red wine during the last hour of cooking.
  11. Continue to simmer for at least one hour, partially covered, stirring occasionally, until the sauce reaches your desired consistency.
  12. If desired, add the cooked Italian sausage (sliced) or other pre-cooked meats (e.g., 1 lb ground beef) and/or vegetables (e.g., 8 oz sliced mushrooms) during the last 30 minutes of cooking. Add pepperoni (about 1/2 cup) during the last 5 minutes of cooking for extra zing.
