Como fazer Slow Simmered Italian Sauce

  1. Place 1 lb Italian sausage in a large, nonstick skillet or Dutch oven.
  2. Drizzle with 1/4 cup olive oil and sauté over very low heat for 5 minutes, turning occasionally. Remove sausage and set aside.
  3. Add 2 tablespoons tomato paste and stir.
  4. If necessary, add another drizzle of olive oil to prevent sticking, and stir well.
  5. Simmer, covered, stirring occasionally, for approximately 30 minutes, until the tomato paste darkens and looks almost black.
  6. Meanwhile, combine the following in a blender: 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can tomato sauce, 1 medium onion (chopped), 2 cloves garlic (minced), 1 (15 ounce) can diced tomatoes (undrained), 2 cups tomato juice, 2 tablespoons sugar, 1 teaspoon salt, and 1/2 teaspoon red pepper flakes.
  7. Blend until completely smooth.
  8. Pour the blended vegetable mixture over the tomato paste in the skillet and stir well to combine.
  9. Simmer, partially covered, for 2 1/2 hours, stirring occasionally.
  10. Add 1 cup red wine during the last hour of cooking.
  11. Continue to simmer for at least one hour, partially covered, stirring occasionally, until the sauce reaches your desired consistency.
  12. If desired, add the cooked Italian sausage (sliced) or other pre-cooked meats (e.g., 1 lb ground beef) and/or vegetables (e.g., 8 oz sliced mushrooms) during the last 30 minutes of cooking. Add pepperoni (about 1/2 cup) during the last 5 minutes of cooking for extra zing.
  13. This makes a large amount, so freeze extra sauce in freezer-safe bags for future use.
  14. Thaw and reheat for use in lasagna, as pizza sauce, for spaghetti and meatballs, etc.
