Gently fold in 1 cup of maraschino cherries, reserving any juice.
- Grease and flour two 9x5 inch loaf pans, or spray with non-stick cooking spray.
- In a small bowl, mix 1/2 cup granulated sugar and 1 1/2 teaspoons ground cinnamon.
- Sprinkle half of the cinnamon-sugar mixture evenly into each prepared loaf pan, coating the bottom and sides.
- Divide the batter evenly between the two prepared loaf pans. Sprinkle the remaining cinnamon-sugar mixture over the top of each loaf.
- Bake for approximately 75 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pans for 10 minutes before inverting onto a wire rack to cool completely.
