  6. Pour the remaining marinade over the steaks, cover, and refrigerate for at least 6 hours, turning occasionally.
  7. Remove steaks from the refrigerator 2 hours before grilling and bring to room temperature.
  8. Preheat grill to medium-high heat. Grill steaks for 10-15 minutes, or until medium-cooked. Do not overcook, or the meat will become tough.
  9. Meanwhile, in a separate saucepan, reduce the leftover marinade over low heat. Once reduced, add the marinated mandarin segments and toss gently to coat.
  10. Heat through. Serve the kangaroo steaks over boiled rice with the mandarin segments.
  11. Prepare a side salad with 3-4 different lettuces. Whisk together 2 tbsp balsamic vinegar, 1 tbsp lemon juice, 1 tbsp concentrated orange juice, freshly cracked black pepper to taste, and 1 tsp Grand Marnier for the dressing.
