  1. Preheat oven to 180°C (350°F).
  2. Line an 18cm x 28cm baking tin with silicone paper.
  3. Peel and cube 1 medium sweet potato (approximately 200g).
  4. Bring a saucepan of salted water to a boil over medium-high heat. Add the sweet potato and cook for 5-7 minutes, or until tender but not mushy.

  13. Sprinkle the remaining Parmesan cheese over the top.
