  6. Remove the skillet from the heat and stir in 1 tablespoon of Calvados (or apple brandy).
  7. Return the skillet to medium heat and cook for about 1 minute, scraping the bottom with a wooden spoon to loosen any browned bits.
  8. Add the reduced cider mixture and 1 teaspoon of fresh thyme leaves to the skillet.
  9. Increase the heat to medium-high and simmer until the sauce has thickened and reduced to 1 ¼ cups (about 3-4 minutes).
  10. Remove from heat and whisk in the remaining 3 tablespoons of butter until melted and smooth.
  11. Season generously with salt and freshly ground black pepper to taste.
