  1. Preheat oven to 350°F (175°C). Grease and flour a 13x9 inch oblong baking pan.
  2. In a medium bowl, whisk together 2 cups of flour and 1/2 teaspoon of salt. Set aside.
  3. In a large bowl, beat 6 egg whites until foamy. Add 1/2 teaspoon cream of tartar and beat until soft peaks form.
  4. Gradually add 3/4 cup of the granulated sugar to the egg whites, beating until stiff, glossy peaks form.
  5. In another large bowl, beat 6 egg yolks with the remaining 3/4 cup of sugar until light and thick.
  6. Stir in 1 tablespoon of orange zest and 2 tablespoons of orange juice.
  7. Gently fold the egg yolk mixture into the egg whites.
  8. Gradually sift in the flour mixture, folding gently until just combined.
  9. Pour batter into the prepared pan and bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  11. Hull and slice about 1/4 of the strawberries. Set aside for garnish.
  12. In a chilled bowl, beat 2 cups of heavy cream until soft peaks form. Gradually add 1/4 cup of icing sugar and 1 teaspoon of vanilla extract, beating until stiff peaks form.
  13. Once the cake is completely cool, use a long serrated knife to cut it horizontally in half.
  14. Place the bottom layer, cut-side up, on a serving platter. Spread with about 1/3 of the whipped cream.
  15. Arrange a single layer of sliced strawberries over the whipped cream.
  16. Carefully top with the second cake layer, cut-side down.
  17. Frost the entire cake with the remaining whipped cream.
  18. Cut the remaining strawberries in half and arrange them in overlapping rows, cut-side down, to create two red stripes and a maple leaf in the center.
  19. Garnish the sides of the cake with any remaining strawberries.
