- Preheat oven to 350°F (175°C). Grease and flour a 13x9 inch oblong baking pan.
- In a medium bowl, whisk together 2 cups of flour and 1/2 teaspoon of salt. Set aside.
- In a large bowl, beat 6 egg whites until foamy. Add 1/2 teaspoon cream of tartar and beat until soft peaks form.
- Gradually add 3/4 cup of the granulated sugar to the egg whites, beating until stiff, glossy peaks form.
- In another large bowl, beat 6 egg yolks with the remaining 3/4 cup of sugar until light and thick.
- Stir in 1 tablespoon of orange zest and 2 tablespoons of orange juice.
- Gently fold the egg yolk mixture into the egg whites.
- Gradually sift in the flour mixture, folding gently until just combined.
- Pour batter into the prepared pan and bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Hull and slice about 1/4 of the strawberries. Set aside for garnish.
