Como fazer Caramels

  1. Melt 1 cup (2 sticks) unsalted butter in a large, heavy-bottomed saucepan over medium heat.

  3. Stir in 1 cup light corn syrup, ensuring everything is well mixed.
  4. Gradually add 1/2 cup heavy cream, whisking constantly to prevent scorching.
  5. Continue to cook and stir over medium heat until the mixture reaches the firm-ball stage (245°F on a candy thermometer). This will take approximately 15-20 minutes.
  6. Remove from heat and stir in 1 teaspoon pure vanilla extract.
  7. Pour the caramel into a well-buttered 9x13 inch jelly roll pan.
  8. Allow to cool completely for at least 4-5 hours, or preferably overnight.
  9. Once firm, remove from the pan, cut into squares, and wrap individually in red and green wrappers or wax paper.
  10. Makes approximately 5 pounds of delicious caramels.
