Como fazer Chicken Shepherd's Pie

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown the chicken (1 lb) over medium-high heat. Remove chicken and set aside.
  3. Add 1 tbsp olive oil to the skillet. Sauté 1 chopped onion (1 medium) and 2 carrots (medium, chopped) until softened (about 5 minutes).

  5. Add 1 tbsp all-purpose flour and cook for 1 minute, stirring constantly.
  6. Gradually whisk in 2 cups chicken broth, scraping up any browned bits from the bottom of the pan.
  7. Stir in 1 (10 ounce) can of sliced mushrooms in butter sauce, 1 tsp dried thyme, 1/2 tsp dried rosemary, salt and pepper to taste.
  8. Return the chicken to the skillet. Simmer for 10 minutes, or until the sauce has thickened slightly.
  9. While the sauce simmers, prepare the mashed potatoes: Boil 2 lbs potatoes until tender. Drain and mash with 1/4 cup milk, 2 tbsp butter, and salt and pepper to taste.
  10. Pour the chicken mixture into a 9x13 inch baking dish.
  11. Top with the mashed potatoes, spreading evenly.
  12. Bake for 20-25 minutes, or until the potatoes are golden brown and the filling is bubbly.
  13. Let stand for 5 minutes before serving.
