  1. Heat 1/4 cup olive oil in a large stock pot over medium-high heat. Brown 1 lb meaty beef bones and 1 lb Italian sausage (removed from casings).
  2. Remove meat and bones from the pot and set aside.
  3. Add 2 celery stalks (finely chopped), 1 large carrot (finely chopped), and 1 large onion (finely chopped) to the pot. Sauté until the onion is soft and translucent, about 8-10 minutes.

  10. Return the pureed sauce to the pot. Add the meat back to the sauce.
