  6. Attach a candy thermometer to the side of the pan, ensuring the bulb doesn't touch the bottom.
  7. Reduce heat to medium-low.
  8. Continue boiling at a moderate, steady rate, without stirring, until the thermometer registers 238°F (soft-ball stage). Adjust heat as needed to maintain a steady boil.
  9. Remove from heat.
