Sauté 1 medium onion, chopped, 1 green bell pepper, chopped, 1 cup mushrooms, sliced, 1 (15-ounce) can black beans, rinsed and drained, 1 (15-ounce) can kidney beans, rinsed and drained, 1 cup corn kernels, and 1 teaspoon chili powder for 3 minutes, stirring occasionally.
  3. Stir in 1/4 cup barbecue sauce, 2 medium potatoes (about 1 1/2 pounds), peeled and grated (or 2 cups cooked mashed potatoes), 1/2 cup breadcrumbs, 1/4 cup chopped fresh cilantro, 1 tablespoon Worcestershire sauce, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper.
  4. Coat a 9x5 inch loaf pan with cooking spray. Spoon the potato mixture into the prepared loaf pan.
  5. Bake for 30 minutes.
  6. Brush the top of the loaf with an additional 1/4 cup barbecue sauce and sprinkle with 1/2 cup shredded cheddar cheese.
  7. Bake for an additional 10-15 minutes, or until the loaf is heated through and the cheese is melted and bubbly.
