- Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Sauté 1 medium onion, chopped, 1 green bell pepper, chopped, 1 cup mushrooms, sliced, 1 (15-ounce) can black beans, rinsed and drained, 1 (15-ounce) can kidney beans, rinsed and drained, 1 cup corn kernels, and 1 teaspoon chili powder for 3 minutes, stirring occasionally.
- Stir in 1/4 cup barbecue sauce, 2 medium potatoes (about 1 1/2 pounds), peeled and grated (or 2 cups cooked mashed potatoes), 1/2 cup breadcrumbs, 1/4 cup chopped fresh cilantro, 1 tablespoon Worcestershire sauce, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper.
- Coat a 9x5 inch loaf pan with cooking spray. Spoon the potato mixture into the prepared loaf pan.
- Bake for 30 minutes.
- Brush the top of the loaf with an additional 1/4 cup barbecue sauce and sprinkle with 1/2 cup shredded cheddar cheese.
- Bake for an additional 10-15 minutes, or until the loaf is heated through and the cheese is melted and bubbly.
