  1. Preheat oven to 350°F (175°C).
  2. In a 1-quart heavy saucepan, melt 1/2 cup (1 stick) unsalted butter over low heat. Stir in 1/2 cup packed brown sugar and 1/2 cup heavy whipping cream. Cook, stirring occasionally, until butter is melted and sugar is dissolved.
  3. Pour the caramel mixture into a greased 13x9 inch baking pan.
  4. Evenly sprinkle 1/2 cup chopped pecans over the caramel.
  5. Arrange 4-5 medium apples, peeled, cored, and sliced, on top of the pecans.
  6. In a large bowl, combine 1 box (15.25 oz) yellow cake mix, 1 cup water, 1/3 cup vegetable oil, 3 large eggs, and 1 teaspoon apple pie spice. Beat with an electric mixer on low speed until moistened, then beat on medium speed for 2 minutes.
  7. Carefully pour the cake batter over the apple mixture in the pan.
  8. Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes.
  10. Run a knife or spatula around the edges of the pan to loosen the cake.
  11. Place a heatproof serving platter upside down on top of the pan.
