How to Make African Beef
- In a medium bowl, whisk together 1/2 cup creamy peanut butter and 2 cups beef broth until smooth.
- Set aside.
- Cut 1.5 lbs stewing beef into 1 1/2-inch cubes.
- Season beef generously with salt and pepper.
- Heat 2 tablespoons canola oil in a large saucepan or Dutch oven over medium-high heat.
- Add 1 large onion (chopped), 4 cloves garlic (minced), 1 green bell pepper (chopped), and 1 cup carrots (chopped).
- Sauté until onions are translucent, about 5-7 minutes.
- Add the seasoned beef and cook, stirring frequently, until browned on all sides.
- Pour in the peanut butter mixture, 1 (14.5 ounce) can diced tomatoes (undrained), 1 cup beef broth, 1 teaspoon dried thyme, and 1 bay leaf.
- Stir well to combine and bring to a boil.
- Reduce heat to low, cover, and simmer for 1 1/2 hours, or until the beef is incredibly tender. (For slow cooker: Cook on low for 7 hours.)
