How to Make Almond Roca

  1. In a medium saucepan over medium heat, combine the butter, brown sugar, and corn syrup. Stir constantly until the butter is melted and the sugar is dissolved.
  2. Bring the mixture to a boil, stirring constantly. Continue boiling for exactly 5 minutes, stirring frequently to prevent burning, until the mixture reaches 245°F (118°C) on a candy thermometer.
