Ingredients for Amazing Braise
- Whole Chicken
- 4 tablespoons olive oil
- White Potatoes
- 1 lb carrots, chopped into 1-inch pieces
- Garlic Cloves
- Orange, Juice Of
- 2 tablespoons soy sauce
- Fresh Rosemary Leaf
- Salt to taste
- Freshly ground black pepper to taste
How to Make Amazing Braise
- Preheat oven to 350°F (175°C).
- Rinse and pat dry 1.5 lbs bone-in, skin-on chicken thighs.
- Season chicken generously with salt and freshly ground black pepper.
- Heat 2 tablespoons olive oil in an oven-safe large skillet or Dutch oven over medium-high heat.
- Add chicken thighs and brown on both sides, about 3-4 minutes per side. Remove chicken from the pan and set aside.
- Add 4 cloves minced garlic, 1 lb small red potatoes (halved or quartered), and 1 lb carrots (chopped into 1-inch pieces) to the skillet.
- Season vegetables with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add 2 tablespoons fresh rosemary leaves.
- Sauté vegetables for 5-7 minutes, stirring occasionally, until they begin to soften and slightly brown.
- Juice 1 large orange (about 1/4 cup juice). In a small bowl, whisk together 3 tablespoons of the orange juice with 2 tablespoons soy sauce.
- Return chicken to the skillet.
- Pour the orange-soy mixture over the chicken and vegetables.
- Cover the skillet and transfer to the preheated oven. Braise for 20 minutes.
- Remove from oven, uncover, and turn chicken pieces. Return to oven for another 10-15 minutes, or until chicken is cooked through and vegetables are tender.
- Serve immediately over rice or quinoa. Garnish with extra rosemary and a squeeze of fresh orange juice. Serve with a side green salad.
