  • Whole Chicken
  • 4 tablespoons olive oil
  • White Potatoes
  • 1 lb carrots, chopped into 1-inch pieces
  • Garlic Cloves
  • Orange, Juice Of

  • Fresh Rosemary Leaf
  • Salt to taste
  • Freshly ground black pepper to taste

How to Make Amazing Braise

  1. Preheat oven to 350°F (175°C).
  2. Rinse and pat dry 1.5 lbs bone-in, skin-on chicken thighs.
  3. Season chicken generously with salt and freshly ground black pepper.
  4. Heat 2 tablespoons olive oil in an oven-safe large skillet or Dutch oven over medium-high heat.
  5. Add chicken thighs and brown on both sides, about 3-4 minutes per side. Remove chicken from the pan and set aside.
  6. Add 4 cloves minced garlic, 1 lb small red potatoes (halved or quartered), and 1 lb carrots (chopped into 1-inch pieces) to the skillet.
  7. Season vegetables with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add 2 tablespoons fresh rosemary leaves.
  8. Sauté vegetables for 5-7 minutes, stirring occasionally, until they begin to soften and slightly brown.
  9. Juice 1 large orange (about 1/4 cup juice). In a small bowl, whisk together 3 tablespoons of the orange juice with 2 tablespoons soy sauce.
  10. Return chicken to the skillet.
  11. Pour the orange-soy mixture over the chicken and vegetables.
  12. Cover the skillet and transfer to the preheated oven. Braise for 20 minutes.
  13. Remove from oven, uncover, and turn chicken pieces. Return to oven for another 10-15 minutes, or until chicken is cooked through and vegetables are tender.
  14. Serve immediately over rice or quinoa. Garnish with extra rosemary and a squeeze of fresh orange juice. Serve with a side green salad.
