How to Make Artichoke Pie

  1. Preheat oven to 350°F (175°C).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add 2 cloves of minced garlic and sauté until lightly golden brown (about 1 minute).
  4. Stir in 14 ounces (400g) of canned artichoke hearts, drained, and cook for 10 minutes. Then, stir in 1/2 cup of bread crumbs and 1/2 cup of grated Parmesan cheese.
  5. Once heated through, transfer half of the artichoke mixture into a 9-inch pie crust.
  6. In a bowl, whisk together 3 large eggs. Pour the eggs evenly over the artichoke mixture in the pie crust. Sprinkle with the remaining 1/2 cup of Parmesan cheese.
  7. Spoon the remaining artichoke mixture into the pie, mounding slightly. Top with 1 cup of shredded mozzarella cheese.
  8. Optionally, sprinkle 1/2 cup of chopped fresh tomato over the top.
  9. Bake in the preheated oven for 45 minutes, or until the crust is golden brown and the filling is set.
  10. Let cool slightly before slicing and serving. Enjoy!
