How to Make Baked Stuffed Artichoke Hearts
- Preheat oven to 375°F (190°C).
- Lightly spray a 9x13 inch baking dish with cooking spray.
- In a medium bowl, combine 4 ounces (113g) of goat cheese, 1 teaspoon Italian seasoning, 1/2 cup (60g) breadcrumbs, and 1/4 cup (60ml) half-and-half. Mix until smooth.
- In a small bowl, combine 1/4 cup (30g) breadcrumbs and 2 tablespoons grated Parmesan cheese.
- Drain a 14-ounce can of artichoke hearts well and cut each heart in half lengthwise.
- Arrange artichoke hearts cut-side up in the prepared baking dish. Drizzle with 1 tablespoon of lemon juice.
- Top each artichoke heart with approximately 1 teaspoon of the goat cheese mixture. Sprinkle the Parmesan mixture evenly over the artichoke hearts.
- Lightly spray the artichoke hearts with cooking spray.
- Bake for 20-30 minutes, or until heated through and golden brown. For grilling, preheat grill to medium-low indirect heat. Place the baking dish on the grill and cook for 20-30 minutes, or until heated through and golden brown, covering the dish with foil to prevent burning.
