How to Make Assault With A Deadly Breath Garlic Chicken

  1. Preheat oven to 375°F (190°C).
  2. Separate 1 whole head of garlic into individual cloves. Do not peel.
  3. Butter a large casserole dish or deep baking pan (approximately 9x13 inches).
  4. Evenly distribute the unpeeled garlic cloves across the bottom of the prepared pan.
  5. Clean and prepare one whole chicken (approximately 3-4 pounds). Place the chicken breast-side up on top of the garlic cloves.
  6. Season the outside of the chicken generously with salt and freshly ground black pepper.
  7. Sprinkle 1 teaspoon of sugar inside the chicken cavity.
  8. Loosen the chicken breast skin and sprinkle 1 tablespoon of herbes de Provence underneath.
  9. Sprinkle 1/4 teaspoon of herbes de Provence inside the chicken cavity.
  10. Cut 1/2 stick (4 tablespoons) of unsalted butter into slices and distribute these over and around the chicken.
  11. Roast uncovered in the preheated oven for 20 minutes.
  12. Baste the chicken with pan juices every 10 minutes for the remaining 55 minutes of cooking time.
  13. After 75 minutes, remove the chicken from the oven and let it rest for 5 minutes.
  14. Carve the chicken.
  15. Remove the chicken carcass from the pan and carefully retrieve the roasted garlic cloves.
  16. Serve the carved chicken with the roasted garlic cloves, drizzled generously with the accumulated pan juices/gravy.
  17. Enjoy! (And maybe schedule a meeting with your dentist for a post-garlic check up 😉)
